Vegetables/Fruits & Cheeses

 

Elegant Cheese Display

Choices such as Sharp Cheddar, Saga Blue, Chevre Rolled in Pine Nuts, Fresh Buffala Mozzarella Rolled in Parsley and Prosciutto, Cranberry Studded Wesley add an air of beauty and sophistication to a cocktail party or heavy hors d’oeuvre buffet.  Almonds, walnuts or pecans along with olives make this show-stopping, crowd-pleaser the perfect starter to build your menu around.

Tomato & Fresh Mozzarella Platter

Sliced tomatoes, freshly torn Buffala mozzarella, strips of fresh basil layered and drizzled with a homemade red wine, pressed garlic vinaigrette.  (We use the best tomatoes available at different times of the year)

Tortellini Skewers

We marinate Cheese Filled Tortellini, Cherry Tomatoes, Black Olives and Cubed Cheeses in an oil & Vinegar marinade laced with fresh herbs then we skewer them on Club Frills for a gorgeous, colorful platter that will not only look beautiful on a buffet, but delight guests with their fresh, mouth-watering combination of flavors.  These are not only fun to eat – they’re delicious!

Baked Artichoke Dip

Marinated artichokes are roughly chopped and mixed with fresh roasted red peppers, Feta & Parmesan cheeses and fresh herbs for a warm, cheesy, creamy dip that puffs slightly and absolutely melts in your mouth.  Served warm in a chafing dish with Crispy Toasted Parmesan Garlic pita crisps.  Outstanding!

Crudités

 Fresh Fruits and Crisp Veggies are a must for a well-rounded menu.  This display can anchor your buffet and makes a beautiful centerpiece to build your party around.  Assorted seasonal fruits & vegetables such as red or green grapes, cantaloupe, pineapple, honeydew melon, kiwi fruit, carrots, celery, broccoli, bell peppers, cherry tomatoes, and cauliflower; to accompany the platter a special pineapple-cheese spread served in a hulled fresh pineapple for a beautiful presentation! Served with an assortment of crackers & a fresh dill dip for the veggies.

Roquefort Grapes

 (Seedless red grapes rolled in sharp Roquefort cheese & toasted pecans).  These are wonderful for a cocktail buffet that includes wine.  $1.95/pp

 

Spinach Crostini

A wonderful combination of spinach, fresh tomato, feta cheese & herbs served hot on crisp baguette rounds.  These must be served hot out of the oven – appropriate for passing on trays at your event.         Two per person.  $2.85/pp

Crisp Garlic crostini topped with soft, tangy goat cheese, sliced tomato and finished with fresh basil and a drizzle of olive oil and fresh herbs.  Two per person.

Spinach Salsa

We have actually had hosts plan parties just so they can serve this extraordinary Eating In specialty.  Our special combination of homemade creamed spinach, artichokes, garlic, fresh herbs, spices and Monterey Jack cheese is topped with fresh tomato salsa and served warm in a chafing dish w/tortilla chips (one of our most popular items!)

Artichoke Cherry Tomato Tartlets

Puff pastry squares topped with a rich sour cream mixture, marinated artichoke hearts and vine ripened cherry tomatoes, sprinkled with fresh Thyme and baked until puffed.  Served room temperature for an elegant, blissful bite before dinner – perfect with cocktails.

A fresh twist on traditionally served mini-quiches – homemade pastry filled with spinach, Gruyere, cream, eggs & fresh herbs.  Served cut into small squares. Two squares per person.

Veggie Bites

Decoratively sliced fresh zucchini, cucumber, yellow squash and carrots individually spread with sundried tomato and roasted red pepper cream cheeses as well as a homemade Boursin cheese.  Very light and healthy – easily passed to your guests.  Three per person.

Margarita Fruit Dip

A creamy, light whipped mixture that contains bright citrus flavors of limes and oranges.  We serve it in a stemmed Margarita glass surrounded by fresh fruit and vanilla wafers.

Plump coastal shrimp served over buttery Cheese grits and studded with smoky bacon.  Who doesn’t love this Southern delicacy?  Treat yourself and your guests to this special dish.

Margarita Shrimp w/ fresh Cilantro Salsa

Summertime parties are the perfect venue for these plump, marinated shrimp.  The name says it all!  A wonderful combination of citrus flavors (and a hint of salt & Tequila!) – Key West style.  Four to five shrimp per person.

Smoked (or Poached) Salmon

Served traditional style w/ capers, chopped red onion chopped egg and piped sour cream all beautifully placed surrounding the salmon on a mirrored platter.  Served w/ assorted crackers.  $5.75/pp

Fresh lump crab, cheeses & sherry make this a dish no one will forget.  Served w/ crackers and pita crisps.  Very special!

Beef Tenderloin Party Platter – A signature item!!!  Beautifully hand-carved beef tenderloin layered on a platter w/ thin red onion slices & surrounded by marinated artichokes, fresh sliced avocado and finished with a balsamic marinade.  Elegance and decadence at once.  Served with sliced soft yeast rolls and a homemade horseradish cream sauce.

Ziti pasta is tossed with our homemade, slow cooked Marinara and baked with a layer of Ricotta and Parmesan cheese then topped with lots of mozzarella served warm in a chafing dish.  Very hearty.
